Pie Iron as the culiary constant

I had lunch with Paul K. yesterday and MWnd obviously came up, thankfully because it was kind of hard eating over the long spells of awkward silence. Immediately, the pie iron was brought up. I feel now we have an amazing cast iron opportunity here at our fingertips. So, I'd like to plant a little delicious seed in the back of your heads, and consider what might work for the pie iron. Briefly Paul and I discussed, strips of marinated skirt steak with peppers and onions, chicken wings and nachos. I believe the picture is using tatertots topped with melted cheese.
